Haupia (hawaiian Coconut Pudding)

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 12 ounces chilled coconut milk
  • 1 1/2 cups water
  • 6 tablespoons sugar
  • 6 tablespoons cornstarch

Recipe

  • 1 combine all ingredients in saucepan.
  • 2 stir over medium heat until thickened.
  • 3 lower heat and cook for ten minutes, stirring constantly to avoid lumping or burning.
  • 4 pour into 8x8 inch dish and chill until set.
  • 5 cut haupia into squares.
  • 6 note: may be topped with crushed pineapple, sliced peaches or sliced mango.
