Creamy Rice Pudding

Ingredients

  • Servings: 10
  • 3 quarts milk
  • 1 1/2 cups long grain rice
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups sugar

Recipe

  • 1 combine milk, rice, and salt in a large pot.
  • 2 bring to a boil, then lower to maintain a rolling boil, stirring constantly, until the rice is tender. (may take a 1/2 hour or longer).
  • 3 mix the eggs and sugar together.
  • 4 add some of the hot milk mixture to the egg/sugar mixture to temper.
  • 5 combine all ingredients in the pot.
  • 6 add vanilla and stir.
  • 7 cool in refrigerator.
  • 8 cinnamon and raisins are optional.
