Creamy Rice Pudding

Ingredients
- Servings: 10
- 3 quarts milk
- 1 1/2 cups long grain rice
- 1/2 teaspoon salt
- 4 eggs
- 2 teaspoons vanilla
- 1 1/2 cups sugar
Recipe
- 1 combine milk, rice, and salt in a large pot.
- 2 bring to a boil, then lower to maintain a rolling boil, stirring constantly, until the rice is tender. (may take a 1/2 hour or longer).
- 3 mix the eggs and sugar together.
- 4 add some of the hot milk mixture to the egg/sugar mixture to temper.
- 5 combine all ingredients in the pot.
- 6 add vanilla and stir.
- 7 cool in refrigerator.
- 8 cinnamon and raisins are optional.
