Lighten Up Creamy Raisin Rice Pudding

- 3 1/2 cups 1% low-fat milk
- 1 cup uncooked rice
- 1 (14 ounce) can fat-free sweetened condensed milk
- 1/3 cup raisins
- 1/4 teaspoon vanilla extract
- fat-free whipped topping (optional)
- ground cinnamon (optional)
Recipe
- 1 combine milk and rice, bring to a boil over medium heat.
- 2 reduced heat to med/low and cover. cook stirring occasionally until mixture is creamy and liquid is almost absorbed, about 25 minutes.
- 3 stir in condensed milk, raisons and vanilla.
- 4 cook stirring occasionally until thickened, about 10 minutes.
- 5 remove from heat and let stand covered 10 minutes.
- 6 top with whipped topping and cinnamon if you want.
