Lighten Up Creamy Raisin Rice Pudding

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 3 1/2 cups 1% low-fat milk
  • 1 cup uncooked rice
  • 1 (14 ounce) can fat-free sweetened condensed milk
  • 1/3 cup raisins
  • 1/4 teaspoon vanilla extract
  • fat-free whipped topping (optional)
  • ground cinnamon (optional)

Recipe

  • 1 combine milk and rice, bring to a boil over medium heat.
  • 2 reduced heat to med/low and cover. cook stirring occasionally until mixture is creamy and liquid is almost absorbed, about 25 minutes.
  • 3 stir in condensed milk, raisons and vanilla.
  • 4 cook stirring occasionally until thickened, about 10 minutes.
  • 5 remove from heat and let stand covered 10 minutes.
  • 6 top with whipped topping and cinnamon if you want.
