Creamy Rice Pudding

Ingredients

- 5 cups whole milk
- 1/2 cup sugar
- 1/2-3/4 cup rice
- 2 eggs
- 1 teaspoon vanilla
- 1 (5 ounce) can evaporated milk
Recipe
- 1 cook milk, sugar, and rice on medium heat for 1 1/2 hours on stove top. stir often.
- 2 take rice mixture off heat. beat eggs with vanilla. remove 1 cup of the rice mixture and stir in beaten eggs. add evaporated milk.
- 3 add mix back to pot and simmer gently for 2 minutes, just until thick enough to coat the back of a spoon. chill and top with cinnamon if desired.
