Low Fat Rice Pudding

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 cups rice, cooked
  • 2 cups skim milk
  • 1/2 cup sugar
  • 5 1/2 ounces fat-free evaporated milk
  • 1 tablespoon butter
  • 1/2 cup raisins
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Recipe

  • 1 put cooked rice, sugar, milk, vanilla, butter and raisins in a pot. simmer until milk is absorbed, about 30 minutes. add evaporated milk and continue to simmer and stir until absorbed, about 15 minutes. add cinnamon and stir.
  • 2 spoon into serving dish and top with fat free whipped cream, if desired.
