Lemon Cheesecake Bars

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 1 (18 ounce) box yellow cake mix (with pudding in the mix)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 8 ounces cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon fresh lemon juice

Recipe

  • 1 preheat oven to 350°.
  • 2 mix dry cake mix, 1 egg and oil until crumbly.
  • 3 reserve 1 cup and pat remaining mixture into a 9 x 13 inch pan.
  • 4 bake for 15 minutes.
  • 5 beat cream cheese, sugar, lemon juice and 1 egg until light and smooth.
  • 6 spread over baked layer and sprinkle with reserved crumb mixture.
  • 7 bake for 15 minutes more.
  • 8 cool completely and cut into bars.
  • 9 store in refrigerator.
