Pistachio Cake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 package instant pistachio pudding mix
  • 1 box cake mix
  • 1 cup oil, plus
  • 1 tablespoon oil
  • 1/2 cup pistachio nut, chopped (optional)
  • 1 cup ginger ale
  • 3 eggs
  • 1 package instant pistachio pudding mix
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) carton frozen non-dairy whipped topping, thawed

Recipe

  • 1 combine cake ingredients; mix about 5 minutes on medium speed.
  • 2 spray two 9-inch cake pans with cooking spray; evenly divide the batter between pans.
  • 3 bake at 350º for 20 minutes.
  • 4 cool completely before frosting.
  • 5 frosting: combine all ingredients; stirring by hand.
  • 6 frost cake and refrigerate.
