Pistachio Cake

Ingredients
- 1 package instant pistachio pudding mix
- 1 box cake mix
- 1 cup oil, plus
- 1 tablespoon oil
- 1/2 cup pistachio nut, chopped (optional)
- 1 cup ginger ale
- 3 eggs
- 1 package instant pistachio pudding mix
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 ounce) carton frozen non-dairy whipped topping, thawed
Recipe
- 1 combine cake ingredients; mix about 5 minutes on medium speed.
- 2 spray two 9-inch cake pans with cooking spray; evenly divide the batter between pans.
- 3 bake at 350º for 20 minutes.
- 4 cool completely before frosting.
- 5 frosting: combine all ingredients; stirring by hand.
- 6 frost cake and refrigerate.
