Fat Free Chocolate Vanilla Pudding

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1/4 cup cornstarch
  • 2/3 cup sugar substitute (to taste)
  • 3 tablespoons unsweetened cocoa
  • 2 1/2 cups vanilla-flavored soymilk or 2 1/2 cups rice milk or 2 1/2 cups skim milk
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh fruit

Recipe

  • 1 mix the dry ingredients in the saucepan. over medium heat, gradually add the liquid, stirring constantly, mixing thoroughly.
  • 2 continue to stir until the mixture comes to a boil. boil for one minute, stirring constantly.
  • 3 remove from heat and serve with fresh fruit garnish- i like it with raspberries!
  • 4 (if using unflavored soy / rice milk, add 1 teaspoon of vanilla to the mixture immediately after removing from heat).
