Marie's Blarney Stones

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 (3 1/2 ounce) package pistachio pudding mix
  • 2 eggs
  • 6 drops green food coloring
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 cups butterscotch chips
  • 1 cup pecans, finely chopped

Recipe

  • 1 cream butter, sugars, vanilla and pudding mix.
  • 2 add eggs and food coloring.
  • 3 mix in flour and baking soda.
  • 4 add butterscotch chips and chopped pecans.
  • 5 chill for several hours.
  • 6 roll into walnut-sized balls and place 2" apart on ungreased cookie sheet.
  • 7 bake for 8 minutes at 350 degrees.
  • 8 (cooking time includes chill time).
