Fruit Ricotta Mousse

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 lb low-fat ricotta cheese
  • 1 pint fruit
  • 1/2 cup jam
  • 8 ounces cool whip lite

Recipe

  • 1 for a smoother, mousse like texture, blend the ricotta cheese a couple minutes in the blender.
  • 2 fold in the fruit and jam.
  • 3 if you plan to serve it all right away, fold in the whipped cream.
  • 4 let it set 20 minutes in the fridge.
  • 5 if you only plan to use a portion now and the rest hours later, save out the whipped cream. let the ricotta fruit mixture rest to let the flavors "marry".
  • 6 spoon out whatever portions you pneed and add the whipped cream.
  • 7 obviously you could use full fat or non fat for the cheese and whipped cream.
