Chocolate Lover's Mousse

Ingredients

- 1 teaspoon unflavored gelatin
- 1 tablespoon cold water
- 2 tablespoons boiling water
- 1/2 cup sugar
- 1/4 cup cocoa
- 1 cup cold whipping cream
- 1 teaspoon almond extract
- fresh raspberry (optional)
Recipe
- 1 in small cup, sprinkle gelatin over cold water.
- 2 let stand 1 minute to soften add boiling water stir til gelatin is completly dissolved and mixture is clear cool slightly in small mixing bowl, stir together sugar& cocoa; add whipping cream& vanilla beat on medium speed of mixture, scraping bottom of bowl occasionally, til mixture is stiff pour in gelatin mixture; beat til well blended spoon into serving dishes or champagne glasses refrigerate about 30 minutes garnish with raspberries, chocolate curls or miniature chips.
