Low-fat, Sugar Free Tapioca Pudding

Total Time: 14 hrs Preparation Time: 12 hrs Cook Time: 2 hrs

Ingredients

  • 2 1/2 cups skim milk
  • 1 1/2 cups agave syrup
  • 1/2 cup tapioca
  • 2 egg yolks
  • 2 1/2 cups cold water

Recipe

  • 1 soak tapioca over night in 2 1/2 cups cold water.
  • 2 drain tapioca and place in crock pot with milk and cook on high for 2 hours.
  • 3 mix yolks and agave.
  • 4 temper and add into crock
  • 5 cook for 15 more.
