Plum Pudding

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons sugar
  • 1 lb green-skinned plum, halved and pitted
  • 1 1/4 cups whipped cream
  • 1 egg

Recipe

  • 1 place the sugar and 2/3 cup water in a heavy-bottomed saucepan. bring to a boil, stirring to dissolve the sugar. boil for 2 minutes.
  • 2 add the plums and simmer for 3-8 minutes, until tender but still holding their shape.
  • 3 divide the plums and syrup in half and leave to cool. puree half.
  • 4 drain the remaining plums and place at the bottom of a serving dish.
  • 5 fold the whipped cream into the puree.
  • 6 beat the egg and fold into the cream. pour over chopped pistachio nuts and serve.
