Plum Pudding

Ingredients
- Servings: 4
- 2 tablespoons sugar
- 1 lb green-skinned plum, halved and pitted
- 1 1/4 cups whipped cream
- 1 egg
Recipe
- 1 place the sugar and 2/3 cup water in a heavy-bottomed saucepan. bring to a boil, stirring to dissolve the sugar. boil for 2 minutes.
- 2 add the plums and simmer for 3-8 minutes, until tender but still holding their shape.
- 3 divide the plums and syrup in half and leave to cool. puree half.
- 4 drain the remaining plums and place at the bottom of a serving dish.
- 5 fold the whipped cream into the puree.
- 6 beat the egg and fold into the cream. pour over chopped pistachio nuts and serve.
