Lemon Pudding Cake

Total Time: 1 hr 7 mins Preparation Time: 12 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 6 teaspoons flour
  • 6 teaspoons butter, melted
  • 2 cups sugar (divided)
  • 4 eggs, seperated
  • 1 1/2 cups milk
  • 1 teaspoon lemon, zest of
  • 2 teaspoons lemon juice

Recipe

  • 1 mix flour, butter and 1-1/2 c sugar.
  • 2 beat egg yolks; add to bowl along with milk and lemon zest.
  • 3 mix well.
  • 4 add lemon juice.
  • 5 beat egg whites until stiff, adding remaining sugar while beating.
  • 6 fold whites into batter.
  • 7 pour into 2 qt baking dish then put the dish in a shallow pan of hot water.
  • 8 bake at 350* for 55 minutes or until lightly browned.
