Lemon Pie

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 (3 1/2 ounce) package lemon pudding mix
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 egg yolks
  • 2 cups water

Recipe

  • 1 stir mix, sugar, water & egg yolks in medium saucepan.
  • 2 stir in 2 cups water.
  • 3 stirring constantly with a wire whisk, cook on medium heat until mixture comes to full boil.
  • 4 cool for 5 minutes, stirring twice.
  • 5 pour into a baked & cooled 9 inch pastry crust or crumb crust.
  • 6 meringue::.
  • 7 beat 3 egg whites in a large bowl with an electric mixer on high speed until foamy.
  • 8 gradually add 1/3 cup sugar, beating until stiff peaks form.
  • 9 spread over filling, sealing to edge of crust.
  • 10 bake at 350 degrees for 10-15 minutes, or until meringue is lightly browned.
  • 11 cool at room temperature, for at least 4 hours.
