Lemon Pie

Ingredients
- Servings: 6
- 1 (3 1/2 ounce) package lemon pudding mix
- 1/2 cup sugar
- 1/4 cup water
- 2 egg yolks
- 2 cups water
Recipe
- 1 stir mix, sugar, water & egg yolks in medium saucepan.
- 2 stir in 2 cups water.
- 3 stirring constantly with a wire whisk, cook on medium heat until mixture comes to full boil.
- 4 cool for 5 minutes, stirring twice.
- 5 pour into a baked & cooled 9 inch pastry crust or crumb crust.
- 6 meringue::.
- 7 beat 3 egg whites in a large bowl with an electric mixer on high speed until foamy.
- 8 gradually add 1/3 cup sugar, beating until stiff peaks form.
- 9 spread over filling, sealing to edge of crust.
- 10 bake at 350 degrees for 10-15 minutes, or until meringue is lightly browned.
- 11 cool at room temperature, for at least 4 hours.
