Lemon Brunch Buns

Ingredients
- 2 packages yeast
- 1 cup warm water
- 2 teaspoons sugar
- 1 cup scalded milk
- 4 egg whites, beaten
- 1/2 cup butter
- 1/2 teaspoon salt
- 4 egg yolks
- 3/4 cup sugar
- 1 package lemon flavor instant pudding and pie filling, prepared
Recipe
- 1 soften yeast in warm water and 2 tsp sugar.
- 2 scald milk and pour over stiffly beaten egg whites.
- 3 add softened butter and egg yolks that have been beaten with sugar until thick and lemon colored.
- 4 to this, add the yeast mixture and flour (about 5-6 cups)to form a soft dough.
- 5 let rise until light.
- 6 pinch off little pieces, rolling them into long strips about 8 inches long.
- 7 then form these strips into figure eights.
- 8 fill holes with lemon filling.
- 9 let rise again about 30 minutes and bake at 350 degrees for 20 minutes or until slightly golden in color.
- 10 dust with icing sugar or drizzle with icing just before serving.
- 11 i have also made these with blueberry pie filling and they were delicious!
