Key Lime Cake

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 1 box lemon cake mix
  • 1 (3 1/2 ounce) package instant lemon pudding
  • 1 cup egg substitute
  • 1 cup applesauce
  • 3/4 cup water
  • 1/4 cup key lime juice
  • 1 cup powdered sugar
  • 1 tablespoon water
  • 1/4 cup key lime juice

Recipe

  • 1 for the cake: preheat oven to 350 degrees and prepare a 10" bundt pan with non stick cooking spray.
  • 2 for the cake, combine all ingredients in a large mixing bowl.
  • 3 beat at meedium speed for 2 minutes.
  • 4 pour into prepared pan and bake for 50-60 minutes (toothpick should come out clean).
  • 5 cool in pan for 25 minutes.
  • 6 poke hole into top of cake with a long tined fork.
  • 7 for the glaze: combine all glaze ingredients and mix well with whisk.
  • 8 pour over warm cake.
  • 9 cool completely.
  • 10 invert onto serving plate and dust with powdered sugar.
