Ingredients

- 3 cups cottage cheese (lowfat)
- 1/4 cup cornstarch
- 1/2 cup sugar
- 2 tablespoons orange juice
- 3/4 teaspoon ground cardamom
- 1 tablespoon vanilla extract
- 1 teaspoon almond extract
- 1/2 cup raisins
- 2 tablespoons almonds, coarsely chopped
Recipe
- 1 preheat oven to 325 degrees.
- 2 lightly oil a 1 quart baking dish or spray with a nonstick cooking spray.
- 3 in a blender container, combine all ingedients, except raisins and almonds.
- 4 blend until smooth. stir in raisins and almonds. pour into a prepared baking dish.
- 5 bake uncovered, 1 hour or until pudding is set and edges are lightly browned.
- 6 let cool 30 minutes to 1 hour before serving.
