Maple Tofu Pudding

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 12 -14 ounces soft tofu
  • 1/4 cup corn oil
  • 1/3 cup maple syrup or 1/3 cup pancake syrup
  • 1 pinch salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup walnuts (optional) or 1/4 cup black walnut, finely chopped (optional)

Recipe

  • 1 drain the tofu and cut it into small pieces.
  • 2 place the pieces in a blender.
  • 3 add the oil, maple syrup, salt and vanilla. put the lid on the blender.
  • 4 process the mixture for a minute or two, or until the pudding is quite smooth.
  • 5 if necessary, turn off the blender, and scrape down the sides of the blender jar.
  • 6 then put the lid back on and process some more.
  • 7 when the mixture is smooth, turn it into 4 small, resealable, half-cup containers.
  • 8 chill until serving time, or serve right away if desired.
  • 9 if you like, you can sprinkle a tablespoon of finely chopped walnuts on top of each serving of pudding.
  • 10 i prefer black walnuts, but any type will do.
