Lemon Pudding Cookies

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 36
  • 1 1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup margarine
  • 1/2 cup unbleached cane sugar
  • 1/2 cup brown sugar
  • 1 (3 1/2 ounce) package instant lemon pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 350°f.
  • 2 mix flour and baking soda.
  • 3 in a 2nd large bowl, cream together the margarine, brown sugar, and cane sugar.
  • 4 add instant pudding mix, stir until blended.
  • 5 add eggs and vanilla.
  • 6 blend in flour mixture.
  • 7 place rounded drops of dough on ungreased cookie sheets.
  • 8 bake for aprox 15 mins - tops and edges will turn golden brown.
