Lemon Pudding Cookies

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1 cup baking mix (like bisquik)
  • 1 (3 1/2 ounce) package instant lemon pudding
  • 1 large egg, beaten to blend
  • 1/4 cup vegetable oil
  • sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 mix all except sugar together in large bowl until dough forms.
  • 3 roll dough into 1-inch balls.
  • 4 place balls 2 inches apart on greased cookie sheets.
  • 5 dip flat-bottom glass into sugar.
  • 6 press glass onto dough ball and flatten into 1/4-inch-thick cookie.
  • 7 repeat with remaining cookies.
  • 8 bake until just golden brown on edges, about 10.
  • 9 minutes.
  • 10 transfer to racks and cool completely.
  • 11 store cookies in airtight container.
