Eldress Prudence's Ambrosia Cake

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2/3 cup butter or 2/3 cup margarine
  • 2 cups sugar
  • 1/2 cup milk
  • 3 cups flour
  • 4 eggs
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1 egg, well beaten
  • 1/2 pint heavy cream, whipped
  • 1 cup grated coconut
  • 1/2 cup sugar
  • 1 orange, juice and zest of
  • 1/2 cup butter or 1/2 cup margarine
  • 1 cup sugar
  • 1/2 cup light cream
  • 1 teaspoon vanilla

Recipe

  • 1 cake: cream butter and sugar together.
  • 2 add the eggs one at a time, beating thoroughly after each egg is added.
  • 3 sift all dry ingredients together and add them alternately with the milk to the sugar-egg mixture.
  • 4 bake at 350° in two greased 8-inch tins for 30 to 35 minutes.
  • 5 when cool, fill with the following.
  • 6 filling: mix together the above ingredients and spread between the two layers and on the top of the cake.
  • 7 vanilla sauce: melt butter in medium saucepan. remove from heat.
  • 8 add remaining ingredients, mixing well.
  • 9 simmer, stirring over low heat about 5 minutes or until the sugar is dissolved.
  • 10 serve hot over pudding or cake.
