Banana Tapioca Pudding

Ingredients

- 2 3/4 cups skim milk
- 3 tablespoons quick-cooking tapioca
- 1/3 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 medium ripe bananas, sliced
Recipe
- 1 in a saucepan, combine milk, tapioca, sugar and egg: let stand for 5 minutes with no heat.
- 2 cover and stir over medium heat until mixture comes to a full boil; remove from heat.
- 3 stir in vanilla and bananas.
- 4 cool for 20 minutes.
- 5 serve warm or cold.
