Mint Mousse

Total Time: 2 hrs 25 mins Preparation Time: 15 mins Cook Time: 2 hrs 10 mins

Ingredients

  • Servings: 6
  • 6 ounces baking bar, they may say chocolate but usually they are not really chocolate
  • 2 cups heavy cream, divided
  • 1 1/2 teaspoons mint extract
  • 1/3 cup powdered sugar
  • 8 drops green food coloring
  • 1/2 cup mini chocolate chip (optional)

Recipe

  • 1 in medium saucepan combine bars, broken up and 1/2 cup cream.
  • 2 stir constantly over low heat until melted and smooth.
  • 3 stir in mint extract.
  • 4 remove from heat and cool completely.
  • 5 in medium size mixing bowl, beat on medium speed remaining cream and the powdered sugar until stiff peaks form.
  • 6 add the food color and beat just until color is uniform.
  • 7 gently fold in the cooled mixture and optional chips if using, until well blended.
  • 8 cover and chill for at least 2 hours.
  • 9 serve as desired.
