Mint Mousse

Ingredients
- Servings: 6
- 6 ounces baking bar, they may say chocolate but usually they are not really chocolate
- 2 cups heavy cream, divided
- 1 1/2 teaspoons mint extract
- 1/3 cup powdered sugar
- 8 drops green food coloring
- 1/2 cup mini chocolate chip (optional)
Recipe
- 1 in medium saucepan combine bars, broken up and 1/2 cup cream.
- 2 stir constantly over low heat until melted and smooth.
- 3 stir in mint extract.
- 4 remove from heat and cool completely.
- 5 in medium size mixing bowl, beat on medium speed remaining cream and the powdered sugar until stiff peaks form.
- 6 add the food color and beat just until color is uniform.
- 7 gently fold in the cooled mixture and optional chips if using, until well blended.
- 8 cover and chill for at least 2 hours.
- 9 serve as desired.
