Mini Christmas Fruit Puddings

Total Time: 1 hr 30 mins Preparation Time: 1 hr 30 mins

Ingredients

  • 400 g fruitcake, pre-made
  • 60 g copha, melted
  • 1 tablespoon brandy or 1 tablespoon orange juice or 1 tablespoon cranberry juice
  • 30 g copha, melted
  • 40 g chocolate, melted
  • 10 red glazed cherries, for decoration purpose so anyting that is edible which are christmas colors (red or green)

Recipe

  • 1 mixture:.
  • 2 crumble fruit cake in a bowl.
  • 3 add copha.
  • 4 add liquid.
  • 5 mix ingredients (mixture should be moist, if to dry add more liquid, if to moist add more fruit cake).
  • 6 make mixture into little balls.
  • 7 topping:.
  • 8 melt the chocolate
  • 9 add melted copha with chocolate and mix together.
  • 10 cut decorations into small (mini) pieces.
  • 11 putting it together.
  • 12 place balls on serving plate or petite patty pans.
  • 13 dribble a small amount of chocolate on the top.
  • 14 add the small decoration.
  • 15 refrigerate until ready to serve.
