Lemon Pudding

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 4 eggs, seperated
  • 1 cup caster sugar
  • 30 g butter, melted
  • 3 tablespoons plain flour
  • 2 teaspoons grated fresh lemon rind
  • 1/3 cup lemon juice
  • 1 cup milk

Recipe

  • 1 place egg yolks in a large bowl.
  • 2 add sugar and stir till smooth.
  • 3 add melted butter, flour and lemon rind, then stir in juice and milk.
  • 4 beat egg whites until soft peaks.
  • 5 gently fold into yolk mix.
  • 6 pour mixture into a well greased, deep oven proof dish.
  • 7 (i use a souffle dish!) bake 170 degrees celcius for 40-50 minutes.
