Marguerite Pudding

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 tablespoon soft butter
  • 110 g sugar
  • 1 egg
  • 1 cup self raising flour
  • 1/2 cup milk
  • 2/3 cup apricot jam

Recipe

  • 1 cream butter and sugar.
  • 2 add egg, beat well, stir in flour and milk.
  • 3 mix well.
  • 4 grease pudding basin [4 cup capacity].
  • 5 line thickly with jam.
  • 6 pour in batter, cover basin with baking paper and foil.
  • 7 tie with piece of string.
  • 8 steam for 1 1/2 hours.
  • 9 stand for 5 minutes before turning out onto serving plate.
