Old Fashioned Banana Bread Pudding

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter or 1/4 cup margarine
  • 4 cups french bread (stale bread) or 4 cups sourdough bread, cubed (stale bread)
  • 3 eggs
  • 1/2 cup sugar
  • 2 cups milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup banana, sliced
  • 3 tablespoons butter or 3 tablespoons margarine
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 3/4 cup milk
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla

Recipe

  • 1 heat oven to 375*f.
  • 2 in a 2-quart casserole melt 1/4 cup butter in oven for 4 to 6 minutes.
  • 3 stir in bread cubes.
  • 4 in medium bowl slightly beat eggs, stir in remaining pudding ingredients "except bananas".
  • 5 stir in bananas.
  • 6 pour over bread cubes, stir to coat.
  • 7 bake for 40 to 50 minutes or until a knife inserted near center comes out clean.
  • 8 meanwhile in a 1 quart saucepan melt 3 tablespoons butter over medium heat.
  • 9 stir in sugar and cornstarch, add remaining ingredients "except for vanilla".
  • 10 continue cooking, stirring occasionally until sauce come to a full boil, about 3 to 4 minutes.
  • 11 stir in vanilla.
  • 12 serve sauce over warm pudding.
