Holiday Rice Pudding

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 5
  • 1 1/4 cups milk
  • 1 1/4 cups water
  • 1/4 cup sugar
  • 1 cup uncooked rice
  • 2 tablespoons butter
  • 1/2 teaspoon almond flavoring
  • 1 cup whipping cream
  • 1 tablespoon sugar
  • 1/2 cup slivered almonds, blanched

Recipe

  • 1 in a large saucepan, combine milk, water and the 1/4 cup sugar.
  • 2 bring to a boil over high heat, stir in rice.
  • 3 reduce heat. simmer, uncovered, about 30-35 minutes or until rice is tender and liquid is absorbed.
  • 4 remove from heat. stir in butter and almond flavoring until well combined.
  • 5 cool.
  • 6 whip cream and beat in 1 tbs sugar.
  • 7 fold cream and almonds into pudding.
  • 8 cover and chill at least 2 hours before serving.
  • 9 serve with fresh raspberries, raspberry jam or sauce.
