Holiday Rice Pudding

Ingredients

- 1 1/4 cups milk
- 1 1/4 cups water
- 1/4 cup sugar
- 1 cup uncooked rice
- 2 tablespoons butter
- 1/2 teaspoon almond flavoring
- 1 cup whipping cream
- 1 tablespoon sugar
- 1/2 cup slivered almonds, blanched
Recipe
- 1 in a large saucepan, combine milk, water and the 1/4 cup sugar.
- 2 bring to a boil over high heat, stir in rice.
- 3 reduce heat. simmer, uncovered, about 30-35 minutes or until rice is tender and liquid is absorbed.
- 4 remove from heat. stir in butter and almond flavoring until well combined.
- 5 cool.
- 6 whip cream and beat in 1 tbs sugar.
- 7 fold cream and almonds into pudding.
- 8 cover and chill at least 2 hours before serving.
- 9 serve with fresh raspberries, raspberry jam or sauce.
