Mandarin Lemon Angel Pie

Total Time: 24 hrs Preparation Time: 24 hrs

Ingredients

  • 3 1/2 ounces lemon flavor instant pudding and pie filling
  • 1/2 cup sugar
  • 3 egg yolks
  • 11 ounces mandarin oranges
  • 1 tablespoon lemon juice
  • 1/2 cup whipping cream
  • 1 meringue pie shell

Recipe

  • 1 combine pudding mix, sugar & 1/4 cup water in saucepan.
  • 2 blend in egg yolks.
  • 3 drain oranges reserve syrup.
  • 4 to syrup add lemon juice & enough water to make 1 3/4 cup. stir into pudding mix.
  • 5 cook & stir over med. heat til thick & bubbly.
  • 6 remove from heat - cool.
  • 7 whip cream til soft peaks form.
  • 8 fold cream & 3/4 cup oranges into pudding mix.
  • 9 spoon into prepared meringue shell.
  • 10 chill overnight.
  • 11 top with remaining orange segments & if desired add whipped cream.
