Lower Fat Oatmeal Coconut Raisin Cookies

Ingredients
- 1/2 cup butter
- 3/4 cup splenda sugar substitute
- 1/2 cup brown sugar
- 1 large egg
- 1 1/4 cups flour
- 1 cup instant oatmeal
- 1 cup sweetened flaked coconut
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup raisins
- 2 tablespoons ground flax seeds
- 2 tablespoons sugar-free instant vanilla pudding mix
Recipe
- 1 beat butter, splenda and brown sugar together.
- 2 put all dry ingredients in a separate bowl and mix.
- 3 combine wet and dry ingredients.
