My Heavenly Rice Pudding

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 cup cooked rice
  • 2 1/2 cups milk
  • 3 large eggs, beat lightly
  • 3/4 cup raisins
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Recipe

  • 1 preheat oven to 325°f.
  • 2 lightly grease a 9-inch baking dish.
  • 3 mix all stuff together except for the cinnamon and nutmeg. pour into baking dish and place in a pan of water about 1 inch deep.
  • 4 bake for 1 1/2 hours, or until lightly browned and set.
  • 5 combine cinnamon and nutmeg together and sift over the top of the pudding.
  • 6 take pan from oven; let cool slightly and then cut into squares. enjoy!
