Ingredients
- 6 1/4 cups coconut milk
- 1 1/2 cups sugar
- 1/4 teaspoon salt
- 2 1/4 cups rice flour
- 3/4 cup cornflour
- 3/4 teaspoon red food coloring
Recipe
- 1 pour coconut milk into saucepan; warm over low heat. add sugar and salt; stir until dissolved. stir in rice flour and corn flour; mix well. filter batter through a fine strainer. divide mixture into 2 equal portions. add red food coloring to one portion. pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer. allow 10-15 minutes cooking time per layer. leave to cool. cut in diamond shaped pieces.
