Low-fat English Rice Pudding

Ingredients

- 1 cup rice
- 1 cup water
- 5 cups skim milk
- 10 teaspoons sugar substitute
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1/2 cup raisins
Recipe
- 1 in dutch oven combine 1 cup water and 1 cup rice.
- 2 bring to a boil.
- 3 add 5 cups milk and raisins.
- 4 cover and lower heat to simmering.
- 5 simmer for about 1 1/2 hours until all liquid has been absorbed.
- 6 remove from heat.
- 7 add all other ingredients.
- 8 best eaten chilled.
