Low-fat English Rice Pudding

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 12
  • 1 cup rice
  • 1 cup water
  • 5 cups skim milk
  • 10 teaspoons sugar substitute
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/2 cup raisins

Recipe

  • 1 in dutch oven combine 1 cup water and 1 cup rice.
  • 2 bring to a boil.
  • 3 add 5 cups milk and raisins.
  • 4 cover and lower heat to simmering.
  • 5 simmer for about 1 1/2 hours until all liquid has been absorbed.
  • 6 remove from heat.
  • 7 add all other ingredients.
  • 8 best eaten chilled.
