Cranberry Fruit Pudding

Ingredients

  • Servings: 6
  • 3 cups cranberries
  • 1 1/2 cups water
  • 2/3 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons orange juice
  • nonfat vanilla yogurt, for topping

Recipe

  • 1 place cranberries and water in a medium saucepan. bring to a boil over medium heat. reduce heat to medium-low and simmer uncovered for 15 minutes.
  • 2 press cranberries through a strainer into a bowl. discard skin and seeds. return cranberry mixture to saucepan. stir in sugar.
  • 3 combine cornstarch and orange juice in a small bowl, stirring to dissolve cornstarch. stir into cranberry mixture. bring to a boil over medium heat, stirring constantly. continue to cook and stir for 2 minutes.
  • 4 divide mixture evenly into six custard cups or small bowls.
  • 5 chill.
  • 6 serve cold, by itself or topped with vanilla nonfat yogurt.
  • 7 cooking time does not include cooling time.
