Coconut Couscous Pudding

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 3/4 cup couscous
  • 3/4 cup coconut
  • 1 tablespoon cornflour
  • 3/4 cup soymilk
  • 3/4 cup coconut milk, lite
  • 1/4 cup golden syrup
  • 1/2 teaspoon mixed spice
  • yoghurt, to serve

Recipe

  • 1 place couscous and coconut in bowl.
  • 2 pour over 1 1/2 cups boiling water, stir well.
  • 3 cover and stand five minutes.
  • 4 in a pot place cornflour, spices,milk and syrup.
  • 5 whisk to combine and cook over moderate heat.
  • 6 stir constantly till mixture thickens.
  • 7 add couscous, mix well.
  • 8 spoon into serving dishes, cool 30 minutes till set.
  • 9 serve with yoghurt.
