Never Been Better Rice Pudding

Total Time: 55 mins Preparation Time: 5 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 2 cups cooked brown rice
  • 1/2 cup sugar substitute (splenda)
  • 2 eggs, slightly beaten
  • 1 1/2 cups 2% low-fat milk
  • 1/2 cup coffee-mate cinnamon vanilla liquid creamer
  • 1/4 teaspoon vanilla
  • 1/4 cup raisins
  • whipped cream, on top if desired (optional)

Recipe

  • 1 place rice in bowl, and add all ingredients, and stir to mix.
  • 2 pour into greased baking dish and bake for about 50 minutes in a 350°f oven.
