Cranberry Mousse

Ingredients

  • Servings: 8
  • 1 cup ocean spray cranberry juice cocktail
  • 1 (3 ounce) package raspberry gelatin powder
  • 1 (16 ounce) can ocean spray jellied cranberry sauce
  • 2 cups frozen non-dairy whipped topping, thawed

Recipe

  • 1 heat cranberry juice cocktail to boiling in a saucepan.
  • 2 remove from heat.
  • 3 stir in raspberry gelatin until dissolved.
  • 4 using an electric mixer on high speed, beat cranberry sauce in a small bowl for 1 minute.
  • 5 stir into gelatin mixture.
  • 6 chill until it begins to thicken, but not set.
  • 7 gently mix in whipped topping, using a rubber scraper.
  • 8 spoon into serving dishes or prepared pie shell.
  • 9 chill until firm.
  • 10 makes 8 servings.
