Cranberry Bread Pudding

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 1
  • 1/2 cup day-old french bread cubes
  • 1 tablespoon dried cranberries
  • 1/3 cup nonfat milk
  • 1 tablespoon egg substitute
  • 1 tablespoon brown sugar
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon cinnamon

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 toss together bread cubes and cranberries; place in a 6-ounce custard cup; if doubling recipe you can use a small casserole dish.
  • 3 stir together milk, egg substitute, brown sugar, vanilla and cinnamon.
  • 4 pour over bread mixture; bake 22 to 25 minutes or until knife inserted in center comes out clean; cool slightly, serve, enjoy.
