Chocolate Mousse

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/3 cup cocoa powder, unsweetened
  • 1 cup evaporated skim milk, undiluted
  • 3 eggs, separated
  • 1/8 teaspoon salt
  • 1/4 cup sugar
  • 1 teaspoon sugar

Recipe

  • 1 in a pan over low heat, whisk the cocoa, evaporated milk, egg yolks, salt and 1/4 cup sugar until smooth and slightly thickened. this should take about 5 minutes. pour into a bowl, cover & cool for 1 hour.
  • 2 beat egg whites until soft peaks form. add the 1 teaspoon sugar and beat until stiff.
  • 3 stir 1/4 of the egg whites into the cooled chocolate mixture, then fold in the remainder. pour into glasses. chill at least 2 hours before serving.
