Peanut Butter Pudding

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 1/2 cup half-and-half
  • 3/4 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • whipped cream
  • chocolate curls

Recipe

  • 1 combine first 3 ingredients in a medium-size heavy saucepan; gradually whisk in milk and half-and-half.
  • 2 bring to a boil over medium heat, whisking constantly.
  • 3 boil, whisking constantly, 1 minute.
  • 4 remove from heat (pudding will be thin).
  • 5 add peanut butter and vanilla, whisking until smooth.
  • 6 pour into a bowl; place plastic wrap directly over warm pudding.
  • 7 chill 2 hours.
  • 8 garnish, if desired.
