Lithuanian Potato Pudding

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 10 large potatoes
  • 1 medium onion
  • 5 slices bacon
  • 1/2 cup milk
  • 3 eggs
  • 2 teaspoons salt

Recipe

  • 1 preheat oven to 400°f.
  • 2 grease a 13 x 9-inch pan.
  • 3 peel and grate potatoes, mince the onion and mix the two together.
  • 4 fry bacon until crisp; pour bacon fat over potatoes, and crumble.
  • 5 bacon into mixture.
  • 6 add eggs, one at a time, mixing well; add salt and milk.
  • 7 pour mixture into prepared pan.
  • 8 bake for 15 minutes.
  • 9 top should be brown and crispy.
