Lemon Dreams

Ingredients

• 1 (18 1/2 ounce) package yellow cake mix
• 1 (3 1/2 ounce) package instant lemon pudding
• 4 large eggs
• 3/4 cup vegetable oil
• 1 lemon, zest of
• 5 tablespoons flour
• 1 cup milk
• 1 cup sugar
• 1/2 cup shortening
• 1/2 cup margarine
• 1 lemon, zest of

Recipe

• 1 mix cake mix, and pudding mix with oil,eggs and lemon zest. pour into muffin cups. and bake at 350 for 15-20min i use large cupcake pan less time is needed if you use the regular size.
• 2 for frosting:.
• 3 mix flour and milk to a smooth paste in small sauce pan.
• 4 cook over low heat until very thick, stirring constantly.
• 5 remove from heat and set aside to cool.
• 6 put sugar and fats into bowl of a mixer and beat at highest speed for 10-12min (this is very important- it must be beaten until so smooth that sugar is hardly noticed).
• 7 when milk and flour paste is cold, beat into sugar mixture until it looks like whipped cream, stir in lemon zest.
