Gigi's Lemon Fluff Sauce

Ingredients
- Servings: 4
- 1/2 cup sugar
- 4 tablespoons cornstarch
- 1 cup water, boiling
- 1 egg, separated
- 4 tablespoons lemon juice
- 1 teaspoon lemon rind, grated
Recipe
- 1 mix cornstarch and sugar in saucepan.
- 2 add water, bring to a boil and cook over low heat for 5 minutes while stirring constantly.
- 3 mix egg yolk and lemon juice together.
- 4 add to heated mixture and stir.
- 5 remove from heat.
- 6 beat egg until stiff but not dry.
- 7 fold heated mixture and lemond rind into egg whites.
- 8 chill.
