Easy Eatin' Lemon Bars

Total Time: 1 hr 10 mins Preparation Time: 40 mins Cook Time: 30 mins

Ingredients

  • Servings: 48
  • 1 (18 1/2 ounce) package yellow cake mix
  • 1/3 cup butter, softened
  • 1/2 cup pecans, chopped
  • 1 (3 ounce) package lemon pudding mix (cook-type)
  • 1 (14 ounce) can sweetened condensed milk
  • 1 lemon, juice and zest of
  • 1 cup powdered sugar
  • 1 lemon

Recipe

  • 1 preheat oven to 350°.
  • 2 for base& topping: combine cake mix and butter, and blend thoroughly.
  • 3 add pecans and mix well.
  • 4 reserve 1 cup of the crumb mixture for topping.
  • 5 press remaining crumb mixture onto bottom of pan.
  • 6 roll lightly with glass or pin to smooth out.
  • 7 for filling: combine pudding mix and sweetened condensed milk, mixing until smooth.
  • 8 add lemon zest and juice to pudding mixture; mix well.
  • 9 pour filling over base and spread gently across.
  • 10 sprinkle with reserved crumb mixture.
  • 11 bake 25-28 minutes or until light golden brown.
  • 12 cool 10 minutes.
  • 13 for glaze: juice lemon to yield 3-5 teaspoons of juice.
  • 14 combine powdered sugar and juice; drizzle over warm bars.
  • 15 cool an additional 20 minutes.
  • 16 cut into bars and serve.
