Crockpot Pea Soup

Ingredients
- Servings: 10
- 1 ham bone or 2 -3 lamb neck bones
- 2 (32 ounce) containers chicken broth or 2 (32 ounce) containers stock
- 2 (16 ounce) bags dried split peas
- 4 carrots
- 2 onions
- 2 tablespoons olive oil
- 2 tablespoons garlic powder
- 2 cups water
- salt and pepper
Recipe
- 1 dice onions and saute in the olive oil until soft then add to crock pot.
- 2 peel and slice the carrots and add to crock pot
- 3 add bone(s), stock, and garlic powder to crock pot.
- 4 add water. you may add water to achieve volume or final density you desire (i usually maximize the space in my crock pot, and this results in a less dense soup that doesn't turn into pudding in the fridge).
- 5 salt and pepper to taste.
- 6 you may opt to make a stock from the lamb bone(s) in your crock pot overnight the night before. this makes it easier to remove the bones and cartilage, then just add everything else.
