Coconut Cake

Ingredients

- 1 (18 ounce) cake mix (without pudding in mix)
- 2 whole eggs
- 1 (15 ounce) can crushed pineapple
- 1 cup liquid (juice drained from pineapple and water)
- 1 (16 ounce) can cream of coconut
- 1 (8 ounce) container cool whip
- 1 cup coconut
Recipe
- 1 place pineapple in blender to puree.
- 2 combine cake mix, eggs, pineapple, liquid (from juice and water);mix.
- 3 bake in greased and foured 9x13 pan at 350 for 30 to 35 minutes.
- 4 when done, punch holes in cake (use wooden spoon handle) and pour cream of coconut over cake.
- 5 when cool, frost with cool whip and top with coconut.
