Coconut Cake

Total Time: 1 hr Preparation Time: 25 mins Cook Time: 35 mins

Ingredients

  • Servings: 12
  • 1 (18 ounce) cake mix (without pudding in mix)
  • 2 whole eggs
  • 1 (15 ounce) can crushed pineapple
  • 1 cup liquid (juice drained from pineapple and water)
  • 1 (16 ounce) can cream of coconut
  • 1 (8 ounce) container cool whip
  • 1 cup coconut

Recipe

  • 1 place pineapple in blender to puree.
  • 2 combine cake mix, eggs, pineapple, liquid (from juice and water);mix.
  • 3 bake in greased and foured 9x13 pan at 350 for 30 to 35 minutes.
  • 4 when done, punch holes in cake (use wooden spoon handle) and pour cream of coconut over cake.
  • 5 when cool, frost with cool whip and top with coconut.
