Chocolate Brandy Pudding

Ingredients

- 180 g dark chocolate
- 140 g unsalted butter
- 3 eggs
- 4 egg yolks
- 125 g caster sugar
- 125 g plain flour
- 60 ml brandy
- cocoa, to dust
Recipe
- 1 preheat oven to 180 c.
- 2 lightly grease 8 ramekins.
- 3 melt cho and butter in bowl over pot of simmering water.
- 4 set aside when combined and melted.
- 5 using electric beaters beat sugar and eggs and yolks together till pale.
- 6 fold choc mixture into egg mixture alternately with flour.
- 7 spoon pudding into ramekins, cook 15 minutes till just set.
- 8 set aside for 15 minutes then pour a little brandy over each pudding.
- 9 dust with cocoa and serve with ice cream.
