Dried Peach Rice Pudding

Total Time: 2 hrs 40 mins Preparation Time: 10 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 6
  • 1/2 cup uncooked rice
  • 1/2 cup sugar
  • 1 cup finely chopped dried peaches
  • 4 cups milk
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt

Recipe

  • 1 combine all ingredients in 2 quart casserole.
  • 2 bake, uncovered, in a 325 degree f. oven for 2 1/2 hours, or until rice is tender. stir occasionally as it cooks.
  • 3 cool. pudding thickens and becomes creamy as it cools.
