Friendship Fruitcake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 20
  • 1 (18 ounce) box yellow cake mix with pudding (2 layer)
  • 1/3 cup vegetable oil
  • 4 eggs
  • 1 3/4 cups fruit, from starter (starter for friendship fruitcake)
  • 1 cup chopped pecans
  • confectioners' sugar (optional)
  • cream cheese frosting (optional)

Recipe

  • 1 line the bottom of a springform angel food cake pan with waxed paper, grease well, then flour.
  • 2 in large mixing bowl of electric mixer, combine dry cake mix and oil.
  • 3 beat in eggs, one at a time, beating well.
  • 4 add fruit; mix well.
  • 5 fold in nuts.
  • 6 pour batter into prepared pan.
  • 7 bake in a pre-heated 350- degree oven 40 minutes, then reduce heat to 300 degrees and bake 35 to 40 minutes more, or until cake tests done.
  • 8 shake pan to loosen cake from sides and let sit 10 minutes.
  • 9 lift the center of the pan out and turn cake onto cake plate.
  • 10 remove waxed paper.
  • 11 turn cake right-side up before serving.
  • 12 sprinkle with confectioners sugar if desired, or top with cream cheese frosting.
  • 13 this cake tastes better when cold.
