Friendship Fruitcake

Ingredients

- 1 (18 ounce) box yellow cake mix with pudding (2 layer)
- 1/3 cup vegetable oil
- 4 eggs
- 1 3/4 cups fruit, from starter (starter for friendship fruitcake)
- 1 cup chopped pecans
- confectioners' sugar (optional)
- cream cheese frosting (optional)
Recipe
- 1 line the bottom of a springform angel food cake pan with waxed paper, grease well, then flour.
- 2 in large mixing bowl of electric mixer, combine dry cake mix and oil.
- 3 beat in eggs, one at a time, beating well.
- 4 add fruit; mix well.
- 5 fold in nuts.
- 6 pour batter into prepared pan.
- 7 bake in a pre-heated 350- degree oven 40 minutes, then reduce heat to 300 degrees and bake 35 to 40 minutes more, or until cake tests done.
- 8 shake pan to loosen cake from sides and let sit 10 minutes.
- 9 lift the center of the pan out and turn cake onto cake plate.
- 10 remove waxed paper.
- 11 turn cake right-side up before serving.
- 12 sprinkle with confectioners sugar if desired, or top with cream cheese frosting.
- 13 this cake tastes better when cold.
